A dry season from the get-go. Winter rain was a bit below average and spring rain was virtually non-existent. Some warmth through to Christmas and into the new year. The saving grace for the vintage came in late January with falls totalling 40mm over a 12 day period, leading into the start of Harvest. They proved invaluable in freshening and balancing the fruit flavours.
S T Y L E
Impenetrable colour. Darkly sweet aromatic, like a great dark chocolate, with some vanilla that then leads into a very rich and dense palate with real weight and power. Fruit cake spice and mocha. A sweetness of bouquet is added by the new American oak character. Combines both classic great year Barossa characteristics and traditional Grains style.
V I N I F I C A T I O N
Grains of Paradise is our interpretation of the classic Barossa Shiraz style, and is vinified accordingly. Small berry Shiraz bunches are de-stemmed but not crushed and fermented for about 10 days or so at a temperature range of 18?_- 22?_, with careful cap management using both pump overs and some hand plunged small batch lots. The wine then undergoes malolactic fermentation in barrique before a maturation period on lees, which can vary from 24 to 30 months depending on the vintage.
